I make a feast for the birds (though squirrels often steal it) by mixing birdseed with peanut butter and rendered beef suet and slathering it on one or more pine cones to hang from a tree outside. This is also partly in memory of my Grandmother who would do that annually as an offering to the wee folk to help them make it through the winter. I also usually make a wreath from evergreens and other local flora (sometimes as gifts), some orange+clove air fresheners, and if my schedule aligns I'll observe a candlelight vigil from dusk to dawn before greeting the sun in the morning, often with a song.

I love rituals focussed on helping our non-human neighbours through the dark time of the year.

I used to do some dusk-to-dawn rituals, but I have not managed one in a long time. Life sort of gets in the way this time of year. But It was always wonderful to make it through and greet the sun.
